St. Galler Bratwurst: Freshly grilled, hold the mustard
A perfectly grilled St. Galler Bratwurst is uniformly brown and crispy, but not charred. The use of mustard or even ketchup is taboo in St. Gallen: a St. Galler Bratwurst is so delicious that any alteration of its taste is considered superfluous and would muddle the true pleasure of its taste. A pleasure whose secret recipe dates back to 1438, when the St. Galler Bratwurst was first mentioned in the statutes of the St. Gallen Butchers’ Guild. It states that the sausage is made from veal, bacon, spices, and fresh milk, which explains its white color. Since then, the recipe for this AOP-certified culinary cultural heritage has remained almost unchanged.
